Healthy Snacks program
On March 3 Eileen Moore, a Food for Life instructor and yoga instructor at PRFC. presented a program on health snacks. Food for Life is an award-winning nutrition education & cooking class program that provides an innovative approach to food as medicine.
Eileen shared how the prevalence of heart disease in her husband’s family encouraged her and her husband to transition to a whole foods, plant based diet. She brought a wealth of educational materials developed by Food for Life and the Physicians Committee for Responsible Medicine (PCRM), which included a “starter kit” in pamphlet form for getting started with a plant-based diet (link below). The Physicians Committee is a 501(c)(3) nonprofit organization, headquartered in Washington, DC that focuses on prevention over pills, and empowering people to take control of their own health through plant-based diets and ethical and effective scientific research.
According to Dr. Neal Barnard of the PCRM, the pillars of heart health include regular exercise, stress relief, avoidance of smoking, and plant-based eating. After learning about healthy plant-based eating, participants enjoyed sampling a delicious and nutritious quinoa salad and white bean dip.
